1st Course
Savory elk meatballs blended with wild rice, celery, carrots, and fennel and steamed in kelp with a tangy lemon-saffron trout sauce.
Paired with Dogfish Head’s Midas Touch

 


2nd Course
Soup: Potato, leek, and wild onion, garnished with scallion ribbons
Salad: Cranberry-vanilla vinaigrette drizzled over walnuts, strawberries, mint, arugula, radicchio, hickory-smoked bacon, and Etorki cheese.
Paired with Snow Goose’s Winter Goose Ale

 


3rd Course
Grilled venison tenderloin in a gin marinade, topped with baked trout and served with herbal shortbread and a drizzle of cedar-honey reduction.
Paired with Rogue’s Shakespeare Stout

 


Intermezzo
Bite-sized savory coconut bread pudding, with vanilla and grilled apple compote and fried ginger shortbread, drizzled with honey.
Paired with the Special Anniversary Barley Wine  from North Coast        

 

5th course
White chocolate and strawberry mousse made with cinnamon and garnished with homemade peppermint sticks and fresh mint sprigs.
